Cheap n Good

Thanks to all the members who answered our call for entries for the best cheap ‘n’ good vegetable and fruit recipes. We received more than 40 entries, and staff were delighted to prepare the dishes and desserts at the cookoff.

Lorena Colin of Boardman, Oregon submitted the winning recipe below, which was prepared for the cookoff by Carolina Valdez, member services representative.

Ingredients

3 carrots
2 potatoes
½ cup of garbanzo beans
½ cup of spinach
½ cup of cabbage

4 red tomatoes
Clove of garlic
A piece of onion
1 tbsp of chicken broth cubes or powder

 

Preparation

Cut all vegetables in small pieces.

Add tomatoes, onion, garlic and water in a blender.  Blend well, strain liquid in a strainer.

In a large pot, add 1 tbsp of olive oil. Pour the tomato sauce in the pot and bring to a soft boil.

Add the chicken broth cubes/powder, then simmer.

Add the vegetables and a bit of water. Cover and simmer for 15 minutes, then serve hot. 

Note: Soup may also be served with shredded cheese.
