The winning recipe for our first cheap ‘n good recipe contest was submitted by Lucina Ramirez Santiago, mother of Nicolas Martinez Ramirez, a CareOregon member. This dish, prepared for the cookoff by David Lima, member services supervisor, earned the most number of votes from staff and members who judged the dishes at the event.
Beef and Vegetable Soup
(Caldo de Res con Verdura)
- 2 lbs. beef, cut in pieces
- 3 potatoes
- 1 Mexican squash
- 1 pound of carrots
- 1/2 garlic
- 1/2 onion
- some cilantro (or whatever you prefer)
Bring water and beef to a simmer for about 1 1/2 hours.
Meanwhile, wash and cut the vegetables, then add vegetables to the mix.
Add salt, onion and cilantro to your preference.
Cook for 25 minutes. Serve and enjoy.
